伝統のあじわいのうなぎ
食事処峰では蒸してから焼く関東風の焼き方で国産の上質なうなぎを提供しています。蒸しは、関東風うなぎの特徴で、白焼の後、蒸し器で15分程度蒸し上げます。蒸すことにより余分な水分を落とし旨みだけを残しうなぎの身をふっくらと柔らかくします。この上質な国産うなぎを創業当時から継ぎ足し続けてきた甘辛い秘伝のタレを塗りながら焼き上げていきます。またうな重だけでなくうな茶漬けもご用意していますので、通常の食べ方とお茶漬けを食べ比べてみてください。

At Japanese Restaurant Mine, we offer eel prepared using the Kanto-style grilling method, which involves steaming before grilling. Steaming is a characteristic of Kanto-style eel preparation. After a brief initial grilling, the eel is steamed for approximately 15 minutes in a steamer. This steaming process helps to remove excess moisture, retaining only the rich flavors and making the eel tender and succulent. We have continued to use this special eel preparation method since our establishment, brushing it with our secret sweet and savory sauce as we grill it. In addition to Unagi-don (grilled eel rice bowl), we also offer Unagi Chazuke. We invite you to compare the regular preparation with the Chazuke style to experience the different flavors.
こだわりの手打ち蕎麦
食事処峰では厳選した国産の上質な蕎麦粉を使用し、練りから切まで全ての工程を職人の手で行ったこだわりの蕎麦です。通常二八と言われている小麦２：蕎麦８の割合よりも若干小麦の割合を減らし蕎麦の風味を引き立たせています。また汁は、特製のかえしに厚めの鰹節から取った出汁を入れて出来上がる、しっかりとした旨みとコクを持たせた濃いめの甘辛汁です。かけ汁には鰹節に、香りはあっさりとしてコクのある鯖節をブレンドします。

At Japanese Restaurant Mine, we use carefully selected domestically produced high-quality buckwheat flour to create our meticulously crafted soba, with every step from kneading to cutting done by skilled artisans. Our soba is unique in that it slightly reduces the wheat-to-buckwheat ratio compared to the typical 2:8 ratio, enhancing the aroma and flavor of the buckwheat. Furthermore, our broth is made with a thick dashi taken from specially prepared katsuobushi (bonito flakes), resulting in a rich and flavorful sweet and savory broth. For the dipping sauce (tsuyu), we blend the fragrance of light and flavorful saba (mackerel) flakes with katsuobushi, adding depth to the flavor.
